Substituting Oil for Butter in muffins - Christine Orr
I substitute oil for butter in muffin recipes. It saves melting butter and is cholesterol free!
I also find the muffins stay moist longer(if there are any left). Just change the grams to ml e.g 100g butter =100ml oil.
