Springtime!

As the daylight hours get longer we have the incentive to spend more time outside – this often means that we suddenly notice all the outdoor jobs that need doing! From a winter of fueling up on hearty casseroles and puddings, we naturally start to crave foods that are fresh and light. Spring brings a range new season vegetables, spring lamb and late in spring we start to see strawberries in stores. We take a look at dishes that celebrate all that is fresh, light and tasty.

Time to dust off the BBQ, pull out the salad bowls and get entertaining!

Rosemary and Red Wine Lamb Cutlets
The sweetness of golden syrup in our marinade brings out the natural sweetness of these delicious lamb cutlets.

Balsamic Roasted Vegetables
When asparagus makes it’s appearance they make a welcome addition to this dish. Throw in any vegetables you want, you can’t go wrong with this recipe. Serve as a side dish or crumble feta over the top for a tasty light meal.

Dress it up
Enhance spring vegetables with this dressing sweetened with a little soft brown sugar, perfect for drizzling over salads and steamed vegetables.

Passion Fruit Custard Pots
Delicious baked custard with a crunchy melted sugar topping – similar to crème brulee except you don’t need a blow torch! Use store bought passion fruit pulp when the fruit is out of season.

Lime & Coconut Baked Cheesecake
Zesty lime gives a lift to this rich, creamy coconut cheesecake.

Mini Pavlovas
Use fresh seasonal fruit to create a decorative topping. Garnish with fresh mint leaves or serve with a berry sauce (puree frozen berries with a little icing sugar).

Coconut Cream Pie
A chilled dessert that can be made in advance; serve with slice fresh fruits such as kiwifruit, mango and pineapple.
