Ingredients

    2 eggs
    1/4 cup Chelsea White Sugar (56g)
    1 Tbsp Chelsea Golden Syrup
    1 1/4 cups Edmonds Self Raising Flour (188g)
    1 pinch of salt
    2/3 cup milk (160ml)

Method

    Whisk eggs and Chelsea White Sugar until pale and thick. Whisk in the Chelsea Golden Syrup.

    Sift flour and salt into a separate bowl. Fold half of the flour mixture into the wet ingredients. Mix in the milk then add the remaining flour. Stand for 25 minutes before cooking.

    Heat a frying pan over medium heat with a little butter. Spoon tablespoons of mixture into the pan and cook until bubbles start to appear on top. Flip pikelets over and cook on the other side until golden.

    Place in a clean tea towel to keep warm while you cook the remaining mixture. Delicious served with butter, jam and cream!

Far more milk needed than recipe states. Needs to be reviewed by Chelsea team, especially for beginner cooks.

Love pikelets with golden syrup, but found this recipe confusing - when is the extra 1/4C flour included? Recipe says to fold in half the flour, then add the rest but never states when to add the extra flour listed in the ingredients. Please help!

This is the best recipe of them all I've tried all the one on Chelsea sugar and by far this is my favorite. The only thing in this recipe is that there needs to be more milk. Overall this is sooooooo yummy definitely recommend.
