Ingredients

    1/2 cup milk
    1/2 teaspoon vinegar
    1 cup flour
    3 tablespoons Chelsea White Sugar
    2 teaspoons baking powder
    1/4 teaspoon baking soda
    1 tablespoon butter (melted)
    1 egg

Method

    Mix milk and vinegar in a cup and set aside to sour.
    Sift all the dry ingredients into a large bowl. Add the eggs to the sour milk and whisk. Add to dry ingredients and whisk well untill smooth.
    Add melted butter, stir in.
    Rub frypan with a little butter and heat on medium.
    Drop tablespoonfull lots of the mixture into the hot frypan.
    When bubbles show flip over and cook other side.

Very Yum

A little on the thick side so added a small amount of milk. It has been ages since I’ve made pikelets but they were nice.

YUM!

Yum! Super puffy

These are nice and even better if you add two banana's into the mix. Everything is the same but cooking time is 1 minute longer.
When bubbles show, flip over and cook the other side. They are lovely.
