Ingredients

    4-5 medium apples
    1 egg
    ⅓ cup Chelsea Soft Brown or Dark Cane Sugar, lightly packed
    95g butter
    ⅓ cup Chelsea Golden Syrup
    1¼ cups self-raising flour
    1 tsp baking soda
    1 tsp ground cinnamon
    1 tsp ginger
    ½ cup boiling water
    5-6 Tbsp Chelsea Maple Flavoured Syrup

Method

    Preheat oven to 180°C, grease 6 ramekins or Texas muffin tin (large muffin tin).
    Peel, core and slice apples, place in a saucepan with a little water, simmer until just cooked but firm. Drain and set aside 18 slices for decoration. Rough chop the remainder to make up approx ¾ cup.
    In a large bowl beat egg and sugar together until combined. Melt butter and golden syrup over a low heat, combine with egg and sugar, beat well. Sift in dry ingredients and mix thoroughly. Stir in boiling water, fold in ¾ cup chopped apple.
    Drizzle a little Maple Flavoured Syrup into the base of each ramekin/tin. Arrange 3 apple slices in the bottom then spoon in pudding mixture (about ⅔ full).
    Bake 20-25 minutes until cooked. Remove from oven to rest 5 minutes before inverting onto a serving plate. Serve hot, drizzled with extra syrup, accompanied with custard or vanilla ice cream for dessert.

Tips

    Recipe can be made ahead and reheated before serving. Freezes well.

I made this and its awesome, I have also used peaches instead of apples and it is just as good. The recipe also can be used as a cake which I made one day when I was in a hurry.
