Ingredients
8 oz butter
8 oz flour
4 oz Chelsea Icing Sugar
4 oz cornflour
(you can make as much as you like seeing as it is 1/2 the amount of Icing Sugar and corn flour compared with butter and flour.)
Method
*Cream butter and icing sugar.
*Mix in cornflour and flour and knead well
*Roll into a sausage shape and cut slices (if it gets too soft – put in fridge until firmer, you can wrap the sausage in plastic wrap)
*Place on greased tray and prick with a fork once or twice
*Bake at 180°C for 5 mins – until just spreading and rising. Turn down to 150°C and continue until just turning brown (10 mins)
This has unlimited variations:
- dip half in melted choc and let set on baking paper,OR add half a cup of choc chips
- add half a cup or orange juice soaked cranberries
- add 2T of LSA (linseed, sunflower and almond meal) soaked in 1T of water (it gives a nutty taste)
- You can even roll it flat on a lightly icing sugared board and cut it into shapes with the kids - perfect for Christmas, Easter or tea parties.
It also freezes very well in an air tight container.
