Ingredients

    Cake
    1 cup Chelsea Caster Sugar (225g)
    125g butter, softened
    Zest of 3 lemons
    3 eggs
    1 cup Edmonds Standard Grade Flour (150g)
    1 1/2 tsp Edmonds Baking Powder
    3/4 cup plain, unsweetened yoghurt (188g)

    Lemon Syrup
    1/4 cup lemon juice (approximately 2 lemons)
    1/2 cup Chelsea Caster Sugar (113g)

    Whipped cream or extra yoghurt, to serve (optional)

Method

    Preheat oven to 170ºC bake. Grease a 20cm round spring-form (or removable base) cake tin and line with baking paper.

    Cream the Chelsea Caster Sugar, butter and lemon zest until pale and fluffy. Add the eggs one at a time and mix briefly to combine.

    Sift in the flour and baking powder. Mix briefly, then add the yoghurt and mix until well combined.

    Pour into prepared tin and bake for 45 minutes, until cake springs back when lightly pressed on top, and a skewer inserted into the centre comes out clean. Leave to cool in tin for 15 minutes before turning out onto a wire rack.

    Serve warm or at room temperature, drizzled with lemon syrup, with a dollop of whipped cream or yoghurt.

    Lemon Syrup
    While the cake cooks, place the lemon juice and Chelsea Caster Sugar in small saucepan and heat gently without stirring, until the sugar dissolves. Remove from heat. Can be used warm or cool.

Tips

    Can be dusted with Chelsea Icing Sugar before serving too.

This was delicious, came out really well. I wonder if the comments that it was flat used regular flour instead of self raising. I didn't have self raising so added a tsp of baking powder which seemed about right

I used some coconut milk instead of yogurt and it was fabulous…love this recipe.so easy and yummy.

Easy to make however it didn't rise like the picture but it did taste ok. I wont be making again.

Every lockdown we've made this cake several times. Easy to make with the kids. We used kalo vanilla bean yoghurt and it turned out delicious. Was delicious hot from the oven and just as good the next day from the fridge. Great recipe!

This is my go to recipe, it tastes amazing! I put the mixture onto a mini loaves tray/muffin tray and always get the best results...it also makes the cooking time shorter and doesn't seem to go flat. 10/10 for me!

It was a bit flat and I could taste the egg a bit.

Next time I'll put one less egg and more baking powder....it was delicious though.

Delicious and easy to make but like an earlier reviewer said, my cake did not rise like the picture. In fact it was half the height! I’m an experienced baker and have tried baking this twice but both times the cake rose but then dropped after cooling down. Still absolutely delish but looked nothing like the picture!!! What am I doing wrong Chelsea?

Instructions are a wee bit confusing. so is it add half the flour, then half the yoghurt, then the other half of the rest?
CHELSEA: Yes, that's correct. Half of the sifted flour followed by half of the yoghurt, then repeat :-)

Try adding a cup of coconut it works well.

I have made this several times and is easily my favourite!

Delicious! Mum and dad loved it even though they didn't help even a little. Yummy with strawberries and Greek yoghurt.

this lemon yogurt cake is nothing special.

Doubled the recipe, cooked in big oblong tin for 59 mins and it was beautiful. Will be a "go to recipe" from now on. Used lemon flavoured yoghurt to intensify flavour.

Very easy and very yummy. I have also replaced the flour with Gluten Free Baking Mix and it was just as nice.

Yummy, I just used ordinary sugar and added a tablespoon of brown sugar to it. I also tipped the lemon syrup over the cake while it was still hot. Lovely tangy moist cake.

loved the sound of this recipe however I just could not get it to rise. Tried using fresh ingredients and it hasn't worked. Everything else I bake is fine except this recipe. What am I doing wrong?
