Cranberry Slice with Berry Icing

Ingredients

    1 packet of plain sweet biscuits - crushed
    1 packet of cranberries - about 250g
    1/2 cup Chelsea Soft Brown Sugar
    1/2 tin condensed milk
    125g softened butter
    1 tsp vanilla essence
    1/2 cup shredded coconut

    Icing:
    1.5 cups Chelsea Berry Flavoured Icing Sugar
    2 Tbsp butter
    2 Tbsp hot water
    Shredded coconut to sprinkle over

Method

    Combine crushed biscuits, Chelsea Soft Brown Sugar, cranberries and coconut.
    Mix in butter, condensed milk and vanilla essence. Combine thoroughly.
    Press into a sponge roll tin or oblong dish (about 20cm x 30cm), using the back of a dessert spoon.

    Make icing by combining all icing ingredients except the coconut and mix until smooth. Ice the base immediately, sprinkle with coconut and place in the fridge until firm.

Need to cook/melt the sugar and butter first like the apricot one. Better without the icing, it's too sweet.

I melted the butter, brown sugar and condensed milk together in a pan first, like the apricot fudge slice recipe does :)
