Ingredients

    Base
    1½ cups Edmonds Standard Grade Flour
    1 tsp Edmonds Baking Powder
    ½ cup Chelsea Soft Brown Sugar
    140g Tararua Butter, melted

    Caramel
    395g condensed milk
    2 Tbsp Chelsea Golden Syrup Tin
    50g Tararua Butter

    Topping
    ½ cup thread coconut
    ½ cup rolled oats
    ½ cup Chelsea Soft Brown Sugar
    30g Tararua Butter

Method

    Pre-heat oven to 175°C conventional bake, or 155°C fan bake. Line the base of a 19cm x 30cm slice tin with baking paper.

    Base
    Combine the Edmonds Standard Grade Flour, Edmonds Baking Powder and Chelsea Soft Brown Sugar in a bowl, add the melted Tararua Butter and stir well until combined, then press mixture evenly into the prepared tin to form a base. Bake for 10-12 minutes until pale golden and just set.

    Caramel
    Melt together the condensed milk, Chelsea Golden Syrup and Tararua Butter in a saucepan over low-medium heat, stirring until golden and thickened (watch the bottom doesn't burn). Set aside to cool for 5 minutes while making the topping.

    Topping
    Combine coconut, oats, Chelsea Soft Brown Sugar and Tararua Butter and stir well.

    Pour the caramel over the par-baked base.  Then carefully spread over topping mixture, pressing into the caramel lightly. Bake the slice for a further 10-15 minutes until golden and bubbling.

    Set aside to cool before cutting into slices.

Tips

    Chelsea Golden Syrup in the iconic red and gold tin is the best for baking. It has a thicker consistency and richer caramel flavour than Chelsea Easy Pour Golden Syrup (which is more suited to drizzling and marinades).

Just too sweet! We had a piece each and couldn't stomach the sugar despite me knocking back the amount of brown sugar.

This is the second time I have made this recipe and friends love it. So easy to make and tastes great. Add a Dollop of cream on the side and makes a great dessert

Seriously delicious! I made these for ANZAC Day this year and was a huge hit. I subbed the golden syrup with Maple syrup (double amount) and it worked really well. Also it took me about 15-20 minutes of constant stirring on low heat to get the caramel thick and beautifully golden. Thanks for sharing this recipe, will be making again and again for sure.

I lo Ed baking g all these goodies for .any years. I'm in a rest home now so don't have to. Looking forward to anzac day. Been .asking knitted poppies for a wreath to celebrate my grandad,father& father-in-law.. my favorite is caramel slice with crushed unsalted cashews on top!

I've made this for so long n so often, I had a suggestion from a friend to add a dark choc ganache on top of the caramel, before the topping n it was amazing!!!

Super easy recipe, turned out perfect! I did use a bit less cooking time as my fan oven is a bit fierce.

This recipe is great. I highly recommend that you give it a try. Ingredients can be found around your kitchen, most are staples. Very quick to make and not a lot of dishes!!

I highly recommend this recipe! As a 14-year-old I found it pretty simple to make -all the ingredients I could find at home. The other day my mother found a very old can of sweetened condensed milk that expired 8 years ago in 2013! I used it in this slice though and it still tastes amazing. A great slice!

Best slice ever, everyone loves it. My best tip is to microwave the caramel instead of on the stoventop. It doesn't burn in the microwave. Just check and stir every few minutes but dont let it get excessively thick

Should the butter in the topping also be melted? And how thick should the topping be when you cook it?

I only just took it out of the oven. Smells AMAZING!!!. Just a little concerned that the caramel hasn't set inside it even though the top was golden brown. Excited to try it though!!

Wow! As a 10 yr old I found this easy and fun to bake. The second I told my younger brother (7) he said it sounded veeeery delicious and started complaining about how he wants them now. Its a wonderful slice with the perfect base and caramel topping, you couldn't have made it any more delicious.

Delicious. I added 1/2 cup of dutch cocoa & 1 tsp of vanilla essence to the base as a variation. As well as a pinch of cinnamon to the crumble and a bit more butter, so it has a chunkier crumble. Great recipe thank you.

Beautiful! I double the base and add a little more butter to the filling, and a little bit more of the topping on top and bake in a roasting dish! It never lasts long in our home!

OMG !!! Made this for my workmates and merchandisers and yup was gone in like minutes ( well as soon as I got into the staff room and put it on the table). Really easy to make and so yummmmmmyyyy

I bake this quite often and add extra ingredients to it. The last time was roasted/salted macadamias, chop them into chunks, place them on top of the caramel and then oatmeal to cover, and I promise you, you won't be disappointed.

CHELSEA: Good idea! Yes, this slice can be frozen. We would suggest wrapping the whole slice in cling film, then a layer of foil, then place in an airtight container and freeze.

I think this is a good and yum. I love it . You have to give it a try.

Very delicious, especially for a caramel-lover! I used dessicated coconut instead of thread (because that is what I had in the cupboard) andI suspect this was the cause of the ANZAC crumble topping not adhering very well to the caramel layer - so in future would definately use thread coconut.
