Ingredients
2 1/2 cups self raising flour
1/2 tsp bicarbonate of soda
1/2 cup (60g) quick cooking oats
1/2 cup Chelsea Soft Brown Sugar
1/2 cup Chelsea Easy Pour Golden Syrup
2 eggs lightly beaten
2 small overripe bananas mashed
1/3 cup vegetable oil
3/4 cup buttermilk
Topping
1/3 cup Chelsea Easy Pour Golden Syrup, extra
1/3 cup pistachio nuts, for garnish
Method
Preheat oven to 180°C conventional or 160°C fan forced. Sift flour and bicarbonate of soda into a bowl, stir in the oats and Soft Brown sugar. Combine golden syrup, eggs, banana, oil and buttermilk and stir into the dry ingredients until just combined. Do not over mix.
Spoon the muffin mixture into greased and base lined (1/3 cup) muffin pans. Bake for 15-20 minutes or until cooked and golden.
Enjoy warm, drizzled with extra golden syrup and sprinkled with pistachio nuts.
