Ingredients

    140g butter
    140g Chelsea White Sugar
    1 tbsp Chelsea Golden Syrup
    1 egg
    280g flour
    1 tsp baking powder
    1 cup sultanas

    Icing
    1 ½ cups Chelsea Icing Sugar
    1-2 Tbsp lemon juice
    1 Tbsp boiling water (approx)
    50g butter (optional)

Method

    Preheat oven to 180°C and line a 30cm x 22cm baking tin with baking paper.

    Put the butter, Chelsea White Sugar and Chelsea Golden Syrup in a pot and heat on low until the butter is melted. Mix in the lightly beaten egg and then sift in the flour and baking powder and stir through sultanas. Be careful not to over-mix.

    Place in the lined tin and cook for 10 minutes until lightly golden on top.
    Ice the slice while still hot with lemon icing.

Cooking time on this is completely wrong. Was still raw after 10 mins and I have an oven that bakes hot! If you try this receipt I would recommend at least 5 more minutes of cook time

Loved this recipe. Beautiful and perfect with a cuppa.

Beautiful easy slice, I find I need to double the bake time though or its not set enough.

Great easy to make recipe, turns out perfect everytime! Suggest adding an extra tbs of golden syrup for a richer flavor and density.
