Ingredients

    225g butter softened
    ½ cup Chelsea Icing Sugar
    Pinch of salt
    3/4 cup cornflour
    1½ cups flour
    ¼ cup chopped walnuts (optional)
    Chelsea LoGiCane™ Low GI Sugar for sprinkling

Method

    Preheat oven to 150°C.
    Cream butter with Chelsea Icing Sugar and pinch of salt.
    Add cornflour and beat again.
    Add 1 cup of sifted flour and the walnuts and beat again, then add remaining flour.
    Knead until right consistency (adding more flour if needed)
    Roll into a log and cut biscuits 1cm thick.
    Sprinkle with Chelsea LoGiCane™ LO GI Sugar.
    Bake for 20-30 minutes.
