Ingredients

    125g butter, room temperature
    1 cup Chelsea White Sugar
    1 ¼ cups self raising flour
    2 eggs
    ½ cup milk
    1 teaspoon vanilla essence
    Pinch of salt

    Icing
    ¾ cup Chelsea Icing Sugar
    5g butter
    1 tablespoon boiling water

Method

    1. Preheat oven to 180°C. Grease and flour a 12 x ½ cup capacity cupcake tin.
    2. Place all the ingredients in a large mixing bowl and beat for ten minutes or until smooth.
    3. Divide mixture between prepared cake tin and bake for 10-12 minutes or until cakes spring back to the touch.
    4. Remove and transfer to a wire rack to cool.
    5. For icing, sieve Chelsea Icing Sugar into a bowl, ensuring to remove any lumps. Place butter and boiling water in a small bowl and mix until butter has melted. Pour into icing sugar, a little at a time and stirring well between each addition until icing reached the desired consistency.
    6. Spread icing sugar over cupcakes and decorate with icing flowers and edible glitter if desired

fabulous cupcakes super moist and spongy! Also very easy.

These cupcakes were amazing and super fluffy. I strongly recommend liners though they make the process much easier and efficient!

Yummy Cupcakes...but took more then 10 minutes to bake..I would say more like 20 minutes

Love this recipe, my go to when needing cupcakes in a hurry (typically in the morning before school!). Always works out well.

they came out looking kinda munted (maybe coz i greased the tin with oil?) and were rly like most on the top but still turned out fine. ez to make. kinda scary looking but yum

We just put them in the oven and they look awesome (all recipes we've tried from Chelsea are great!) bet there gonna be awesome!

I was hesitant to make this given the mixed reviews but I gave it a go and was very surprised. The cupcakes were light and not overly sweet. I love the fact that you have 1 bowl and add everything in. Very quick and easy. Great way to introduce the kids to baking :)

These cupcakes are easy to make BUT! it took twice the amount of time to cook them so I recommend cooking them for 20 minutes

It was perfectly fluffy, it tasted delicious and was such a simple recipe to recreate.

What a disappointment! The raw mixture tasted fine but that was where the positives end. The amount of butter that poured out of the cupcakes on cooking was obscene. I took into consideration the comments by other reviewers recommending adding an additional quarter cup of milk. Wish I hadn’t now as I ended up with more of a batter than a light moist cake. I have had to place the cup cakes on absorbent towels to soak up some of the grease. In short the cupcakes are terrible and will be going in the bin. :-(

Such an easy recipe! I added 1/4 cup less sugar which took away the crispiness on the top. And next time I think I will add more milk, but on the whole it's a good recipie

Easy and tasty, a little on the sweet side but good. I added a 1/4 cup more milk to moisten the mix which helped the end result. It's great to have a quick whip up recipe like this for the school bake sale! I iced them with a vanilla buttercream...yum!

Easily the greatest tasting vanilla cupcake I've tried! The family absolutely loved it. I added about 1/4 of a cup more milk than required and it made it just a little more moist but I'm sure it would still be fine without it.

This is the best and easiest cupcake recipe I have ever tried hands down!!!!! Absolutely loved the cupcakes and they remain moist in an airtight container for over a week. Thank u for sharing this recipe!

So easy to make! The middle of my cupcakes sunk but still tasted just as amazing as I had hoped they would, especially with buttercream :)

Wow I'm impressed, these are so easy to make, a little too sweet but are light and fluffy and taste delicious. I will definitely be using this recipe again. I will probably try it with a little less sugar as topping will give them a real 'sugar hit'

These taste amazing and are super easy to make. We made them in cooking class and everyone devoured them in seconds. I love how the top is crunchy when they have just come out of the oven! BEST CUPCAKES EVER!

Great recipe, easy to make and very fluffy. I make these all the time, however I have learnt from a couple of mistakes...Don't under mix otherwise there not fluffy, and make sure the butter is room temp not melted.

Delicious of course, light and iced with lemon butter icing made them all the more yummy.

Hi, does different sugar affect the taste of cupcake? Thank you!
CHELSEA: Hi there, you will find that the darker sugars (soft brown, dark cane etc) will give the cupcakes a hint of molasses/caramel flavour as well as a darker colour. We recommend using sugar with crystal sizes no bigger than Chelsea White Sugar for cupcakes.

It would be good to know on average how many it makes.

so far so good! just put them in the oven. So easy to make, took me only a couple of minutes. I added way more vanilla essence than instructed- I always do haha ;) But they smell heavenly before baking already and the consistancy of the mixture is so smooth and creamy. Will update again as soon as they are done baking ! Thanks for this easy and great looking (till now) recipe ! :)

this is one of my favorite cupcake recipes. i like to put a pottle of ricotta into the mix. it makes it very nice. a must try!!

These cupcakes are easy and delicious!! I creamed the butter and sugar first, added the eggs, milk and vanilla, then beat together until smooth. I sieved the flour in last and folded in, taking care not to overmix. I baked them for 12mins and they were perfect - light and fluffy inside with a slight crunch on top. NB: I used a different buttercream frosting recipe (because i already have one I particularly like), but I'm sure the one above would be good too :o)

Tried this for the kids. Every item appears to be measured correctly so no leftovers. Nice and fluffy cakes that were enjoyed by all. Gopi

So so easy! Made two batches for a birthday party with buttercream icing, nobody would believe that these were made from scratch! The consistency was so light and fluffy, they thought these came from a box - which is exactly what I was going for, I hate when cupcakes go hard or syrupy or have that heavy texture. Thank you for this recipe!
