Ingredients

    330g pitted fresh dates
    1 cup fresh orange juice
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp sweet paprika
    ½ tsp ground ginger
    ½ tsp ground cinnamon
    Grated rind and juice of 1 lemon
    2 tsps pomegranate molasses (optional)
    1 cup Chelsea Jam Setting Sugar
    1 tbsp unsalted butter

Method

    1. Combine dates, orange juice, spices, lemon rind and juice and pomegranate molasses in a large saucepan over high heat. Bring to the boil. Reduce heat to low and simmer, covered, stirring occasionally, for 10 mins or until dates are soft and mixture is thick.

    2. Add sugar and butter. Increase heat and bring to the boil and boil for 4 mins or until mixture is thick and leaves the side of pan.

    3. Pack into warm sterilised jars and seal with a lid. Set aside to cool, then label, date and store in a cool dark place. Refrigerate after opening.

    Makes approx. 4 small preserving jars.
