Ingredients

    75g low fat margarine
    1 Tbs Chelsea Golden Syrup
    50g Chelsea LoGiCane sugar
    100g rolled oats
    100g wholemeal flour
    50g raisins
    1 tsp baking soda
    2 Tbs boiling water

Method

    Preheat oven to 180⁰C. Line a large baking tray with baking paper.
    In a bowl mix together margarine, Chelsea Golden Syrup and Chelsea LoGiCane sugar.
    Add oats, raisins, wholemeal flour and baking soda (dissolved in boiling water).
    Mix together with hands until moist and able to be shaped.
    Roll or squeeze into small balls about the size of a heaped teaspoon, place on the tray and flatten with a wet fork.
    Bake for 10-15 minutes until a light golden colour.
    Allow to cool fully before serving.

    Variation: add a small handful of chopped walnuts

I baked these Oatmeal and Raisins healthy cookies and adjusted the recipe slightly by doubling up my measurements because I wanted a larger amount of cookies. I used honey instead of golden syrup and added a pinch of cinnamon and also used 1 egg for bonding purposes. They came out delicious and very tasty!

I did not enjoy the product of this recipe, they were dry and the whole meal flour is unpleasant. Need more butter I think.
