Cucumber Loaf with Sunflower Seeds

125g butter
1 cup Chelsea Organic Raw Sugar
2 tsp Vanilla essence
2 eggs
1 cup flour
1 tsp baking powder
1 tsp ground cinnamon
1/2 cup sunflower seeds
1 cup peeled grated cucumber, drained
Cream butter, Chelsea Organic Raw Sugar and vanilla essence, then add eggs (one at a time).
Add flour, baking powder, cinnamon and sunflower seeds and fold through the grated cucumber.
Spoon into a well-greased or paper-lined loaf tin.
Bake for 55 mins at 150°C.
Cool on a wire rack.
This is delicious as it is or can be buttered like a loaf.
