250g butter
625g high grade flour
500g Chelsea Soft Brown Sugar
1 tsp mixed spice
4 eggs
1 tsp vanilla essence/1 tsp lemon essence/almond if preferred
1.125kg mixed fruit
300mls pale or dark ale eg summer ale
1 tsp baking soda
Preheat oven to 115 degrees. Grease a 25cm tin and line with baking paper. Blend the butter and flour in a food processor. In a large bowl put in fruit, spice, Soft Brown Sugar, and mix. Add the butter and flour mix to this.
Whisk the eggs and esscence together in a seperate bowl.
Heat ale for short time in microwave or on the stove add the warmed ale to egg mixture and add baking soda.
Mix the dry ingredients with the egg mixture and combine well. Pour into the tin and cook for 3.5 - 4 hours.
