1 egg white
3/4 cup of Chelsea Caster Sugar
1/4 tsp cream of tartar
2 Tbsp of water
1/2 tsp of essence of your choice
Place egg white, sugar, cream of tartar and water in the top of a double boiler or heat proof bowl. Beat to combine.
Place over the double boiler or saucepan and continue to beat until the mix forms soft peaks.
Remove from the heat and add in any colours or flavourings. Beat until the mix forms stiff peaks.
Makes enough frosting to cover the top of a 20-23cm cake.
I thought this recipe was terrific, I did a double batch and added strawberry flavouring. The icing was great and not heavy like buttercream icing.
