Apple Sauce Raisin Loaf

Ingredients

    1 egg
    250 ml of apple sauce or pureed stewed apple
    3/4 cup of Chelsea Dark Cane Sugar
    50g butter melted
    2 1/4 cups flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1/2 cup raisins (or sultanas)
    1/2 cup walnuts or pecans – chopped

Method

    Preheat oven to 180°C
    Line a 23 x 13 cm loaf tin with baking paper and grease well.
    Mix egg and apple sauce, add Chelsea Dark Cane Sugar and melted butter, add the dry ingredients, raisins, and nuts. Mix well and pour into prepared tin. Bake approx 1 hour until a skewer comes out clean and the sides of the loaf are slightly shrunken from the side of the tin.
    Cool in the tin for 10 mins then turn out onto a wire rack and cool completely. Slice thinly and the loaf can be buttered if desired.

Lovely easy recipe used brown sugar and made another with dates

I've not made this yet, but can you freeze it?
CHELSEA: Yes, you could freeze this (either whole or as individual slices). Just make sure you wrap it up well. Enjoy!

I want to omit the nuts in this recipe. Could the fruit be increased or leave as is?

I found this loaf very very boring. It did get slightly better the next day, but it's not a recipe I would repeat.

It's delicious and actually tastes better overnight. I use brown sugar as I did not have dark cane sugar. So simple to assemble.
