Ingredients

    3/4 cup Chelsea LoGiCane™ Low GI Sugar
    1 cup wholemeal flour
    1 cup flour
    4 teaspoons baking powder
    2 teaspoons mixed spice
    1/2 cup sultanas
    1 egg (lightly beaten)
    1 cup canned apple sauce, stewed apple or apple puree
    1/4 cup oil
    1/4 cup low fat milk

Method

    Preheat oven to 180°C. Place 12 paper cases inside the cups of a tray of 12 muffin tins.

    Mix previously combined wet ingredients into the dry ingredients until just lightly combined. Don’t over mix or the muffins will be quite tough and solid. Spoon mixture into the paper cases.

    Bake for 20 – 25 minutes until lightly golden brown. Cool on a wire rack.

    We've topped ours with a little cream cheese icing!

We microwaved the apples so they were nice and chunky in muffins. However, this meant the muffins were a little bit dry! We sprinkled cinnamon sugar on the muffins which made them super nice on the outside. Maybe if they are a little bit dry add a bit more milk or oil.
