750g Ripe Apricots, stones removed
Juice of 1/2 Lemon
1/2 Teaspoon Ground Cinnamon
750g Chelsea White Sugar
Place halved apricots in deep bowl, suitable for use in microwave. Add lemon juice.
Cover bowl with plastic wrap and cook on high setting for about 15 mins or until fruit is soft.
Remove plastic and stir in cinnamon.
Add Chelsea White Sugar and stir until dissolved.
Cook, uncovered, on high for 20 to 30 mins, stirring once, or until setting point is reached.
Pour into warm sterilized jars and seal.
