Ingredients

    425g tinned apricot halves, drained
    1/2 cup milk
    4 eggs
    1/2 cup Chelsea White Sugar
    250g cottage cheese
    1 cup flour
    1 1/2 Tbsp Chelsea Icing Sugar

Method

    Preheat oven to 180°C.
    Place apricot halves on the base of a 20cm flan dish. Combine remaining ingredients, except Chelsea Icing Sugar in a food processor, blend until smooth. Pour batter over apricots.
    Bake for 30 minutes or until golden. Dust with Chelsea Icing Sugar, serve hot.
