Ingredients

    3 eggs
    1 cup Chelsea White Sugar
    250ml oil (e.g. rice bran oil or canola oil)
    1 ½ cups plain flour
    2 tsp baking powder
    1 tsp baking soda
    2 tsp cinnamon
    1 cup grated carrot
    1 cup banana, mashed

Method

    Preheat oven to 180°C.
    Mix eggs, Chelsea White Sugar and oil until light and fluffy. 
    Sift flour, baking powder, baking soda and cinnamon together and stir into the egg mixture.
    Add banana and carrot and mix until combined.

    To make a loaf, spoon into a loaf tin and bake for 1 hour.
    To make as muffins, spoon into a greased muffin tin and bake for 15 minutes.

My loaf did not completely cook in 1 hour. I turned the oven down and let it cook on for 15min till the skewer was clean. Great flavour and will bake again.

Made muffins out of the mixture, turned out great! Will freeze them so I can take them out one at a time!

So delicious. My daughter loves it.

Great versatile recipe! Made normal sized muffins + batch of mini muffins for the kids out of the same batch. Iced with cream cheese icing - yummy! Also made some with sultanas mixed in as well.

Not sure on the cooking time, I just rescued my after 1 hour!
