3 very ripe bananas
1 1/2 cups Edmonds Standard Grade Flour (225g)
1 cup Chelsea White Sugar (225g)
65g butter, melted
1 egg
1 tsp vanilla essence
1 tsp Edmonds Baking Soda
1/2 tsp Edmonds Baking Powder
Topping (optional)
1 ripe banana, peeled and sliced into 2 long halves
2 Tbsp Chelsea Coffee Sugar Crystals
Grease a loaf tin (approximately 22-24cm x 13cm) and line with baking paper. Preheat oven to 180°C bake.
Peel bananas and place in a large bowl. Mash well.
Add all other ingredients and stir to combine. Pour into prepared loaf tin.
If adding the topping, place sliced banana halves on top and sprinkle with Chelsea Coffee Sugar Crystals.
Bake for 50-60 minutes, or until a skewer inserted in the centre comes out clean. Leave to cool in tin for 10 minutes before turning out onto a wire rack to cool completely.
Wonderful recipe, I halved the sugar and added chopped walnuts. So moist, so tasty, everyone lives it.
Very tasty but too sweet. I added the banana halved long ways plus sugar on top as suggested and it sunk a fair bit which made my loaf split long ways in half so I probably won't do that again.
Really yummy banana loaf, super easy to make with my kids. I do halve the sugar as I don't think it needed 1 cup.
Every day ingredients. Easy prep. Tastes great - I used wholemeal flour. Next time I would probably do 1/2 - 3/4 cups of sugar as was a bit sweet for my family - I just put it in with the roast chicken and it was ready when we finished eating

So easy to make especially for a non-baker like me, who was just trying to use up the over-ripe bananas. Threw in a cup of blue berries as well and it turned out perfect!

Great easy recipe, first time I made it I stuck to ingredients listed, from then on I have added 2 tsp Cinnamon, 1/4 cup chopped dried apricots, 1/4 cup mixed peel, 1/4 cup walnuts. Also decreased sugar to just a small half cup. Awesome, easy and everyone enjoys it.

Well made this in an hour..but added in a bit of milk & grated orange with nuts on top. But turned out fine. I tried half slice with butter...blinked and it was all eaten by family. So easy in the one bowl too. Wish Id taken a photo before it got eaten. Easy quick bake if you need to bring somethg to a party.
Fabulous. This is a lovely moist loaf that doesn't dry out. I only had 2 bananas but that still worked.
Super easy and tasty. Only one bowl. Problem is loaf is eaten in 5mins in a house of hungry boys so need to keep making them.
Brilliant and huge hit with the kids! They are teenagers by the way and so simple. And husband (sheep farmer scoffed half of it also, so I had to make another one!@!@@:@)
