Ingredients

    2 cups Edmonds Standard Grade Flour
    1 teaspoon Edmonds Baking Soda
    1 tea spoon Edmonds Baking Powder
    1 cup Chelsea White Sugar
    1 egg
    3/4 cup Simply Canola Oil
    4 mashed bananas

     

Method

    Heat oven to 180C.

    Sift Edmonds Standard Grade Flour, Edmonds Baking Soda and Edmonds Baking Powder into a bowl.

    Stir in Chelsea White Sugar.  

    Lightly beat the egg and add to the Simply Canola Oil.

    Add bananas and the Simply Canola Oil and egg mixture to the dry ingredients . Stir to combine.

    Line a large loaf tin with baking paper and spoon mixture into tin.

    Bake about 45 minutes or until a skewer comes out clean.

This is the most delicious moist divine EASY loaf to make!
Absolutely perfect for those mucky looking bananas that get left behind in the fruit bowl.
Also love that there’s no need for butter.
Mine took longer than the time stated but I reckon that’s cos of my oven.

Do you add the sugar to the flour mix, it’s confusing.
Chelsea Sugar:
Yes, sift the sugar into the flour mixture.

No spices! Just wrong.

So easy and tasty. Great way to use up leftover bananas and nice to have recipe without butter and milk.

I used brown sugar as we had no white sugar in the house and it was still delicious, moist and dark. I much prefer dark to light coloured as dark has a better flavour. Thanks for your recipe, it's a keeper for me and the family.
