Ingredients

    100g butter
    1 cup Chelsea Organic Raw Sugar
    1 egg
    1 tsp baking soda
    1 cup milk
    1 1/2 cups standard flour
    1 tsp cinnamon
    approx 1 1/2 cups blackberries (blueberries or boysenberries)

Method

    Cream butter and Sugar together, then add the egg and beat well. Dissolve baking soda in the milk.
    To the creamed butter mixture, mix flour and cinnamon alternatively with the milk and soda mixture.
    Lastly stir in the berries. Spoon into a well-greased or paper-lined large cake tin or sponge-roll tin. Bake for 45 minutes at 190°C.

    Serve warm, cut into slices and dusted with Icing Sugar, softly whipped cream or accompanied with ice-cream.

Really nice, I have made this twice now with fresh blackberries, took a cake to work and everyone loved it.

Great tasting. I didn't have enough canned berries so supplemented with green kiwifruit which worked very well. Came out really nice and a bit different. Was quite a wet pudding and not hugely attractive! But warming and very addictive.
