Ingredients

    250g butter
    1 cup Chelsea Caster Sugar
    1 cup Chelsea Soft Brown Sugar
    1tsp vanilla essence
    2 eggs
    3½ cups self-raising flour
    Optional – A handful of any other extra ingredients (eg. raisins, choc chippies, nuts)

Method

    Cream butter, sugars & vanilla together until light & fluffy. Add eggs in 1 by 1. Mix well.
    Stir in self-raising flour and add any extra ingredients if using.
    Roll into balls and place 2cm away from each other on a lined/greased flat baking tray.
    Bake at 180°C for 10-12 minutes or until the bottoms are coloured and tops are pale.
