6 Large Peaches (White if possible), blanched, peeled, halved and stoned
2 Tablespoons Lemon Juice
Blackberry Jam
3 Tablespoons blanched chopped Almonds
3 Tablespoons Chelsea White Sugar
1 Tablespoon Butter
1 : Preheat the griller to high.
2 : Place the peach halves in a flameproof serving dish. Sprinkle with lemon juice.
3 : Place about 1 heaped teaspoon jam in the centre cavity of each peach half. Mix chopped almonds and Chelsea White Sugar together and sprinkle over peaches. Dot with pieces of butter.
4 : Place dish under griller and grill for about 2 minutes or until the top is bubbling and the sugar melted.
