1 1/2 cups dates
1 cup Chelsea White Sugar
1 egg (beaten)
125g butter
1/2 tsp vanilla essence
3 cups rice bubbles
1/2 cup coconut
Chop dates and put in a saucepan. Add the sugar, beaten egg and butter. Boil very slowly for 3 minutes, stirring all the time. Don't let the egg scramble.
Remove from heat and add vanilla and rice bubbles. When cool enough to handle roll into small balls then roll in coconut to cover.
Nice with a coffee.
