Ingredients

    300ml whipping cream, cold
    60g Chelsea Icing Sugar
    1 tsp vanilla extract – with seeds

Method

    In a chilled bowl combine the cream with the icing sugar and vanilla extract. Whisk until it thickens enough to pipe, but do not overbeat (it should be a light consistency) and then spoon into a piping bag with a large star nozzle attached.
    Pipe onto desserts, into profiteroles or use to sandwich layers of sponge cake.
