Cheese, Bacon and Banana Muffins

2 cups flour
1 cup Chelsea White Sugar
1/2 cup parsley finely chopped
4 rashers rindless bacon finely chopped and cooked in microwave or frypan
2 ripe bananas mashed
1 1/2 cups tasty cheese grated
2 teaspoons baking powder
3 eggs
2 cups milk
2 teaspoons dry mustard powder
150g butter
salt and pepper to taste
Mix all ingredients until just combined. Don’t overmix.
Spoon mixture into well greased or oil-sprayed muffin tray.
Bake for 25-35 minutes at 160C.
Cool slightly in the tray, then remove to cool further on a wire rack.
I was sceptical about this flavour but it sounded like french toast so I made them anyway.
I halved the sugar and they were still very sweet and the flavour is really delicious.
A great lunchbox treat for the kids!
This recipe actually gave me hope that I can actually cook as I'm not really a baker but I did the first recipe and I ended up going muffin crazy.
