4 Individual Cheesecakes (pre-made)
310g Canned Mandarin Segments, drained
Liqueur Sauce
30g Butter
3 Tablespoons Chelsea Soft Brown Sugar
1 Teaspoon Grated Orange Rind
1 1/2 Cups Orange Juice
2 Tablespoons Cointreau or any Orange Liqueur
2 Tablespoons Cornflour blended with 2 Teaspoons Water
1 : Place cheesecakes on individual serving plates.
2 : Divide mandarin segments into four equal quantities and arrange on top of cheesecakes. Refrigerate until required.
SAUCE:
1 : Melt butter in a saucepan, stir in Chelsea Soft Brown Sugar and cook over a low heat, stirring until sugar dissolves.
2 : Add orange rind, orange juice and Cointreau and stir over a medium heat until sauce is smooth. Bring to the boil and boil until sauce reduces by one-third.
3 : Stir in cornflour mixture, cook over a high heat until sauce boils and thickens.
4 : Spoon sauce around bases of cheesecakes and serve immediately.
