Quesadillas are Mexican sandwiches made with soft flour tortillas. They are super quick to make and are a neat change from the usual toasted sandwich.
8 soft flour tortillas
2 spring onions, chopped
1 firm but ripe avocado, peeled and chopped
juice of 1 small lime or ½ lemon
2 tablespoons mild sweet chilli sauce
2 tablespoons chopped fresh coriander or parsley
salt and freshly ground black pepper
1 cup grated tasty cheese
1 teaspoon oil or spray oil
Lay out 4 tortillas. In a small bowl, mix spring onion, avocado, juice, chilli sauce and fresh coriander or parsley. Spread over the tortillas like buttering bread. Season with salt and freshly ground black pepper. Sprinkle over with cheese and cover each with another tortilla.
Heat oil in a large, preferably non stick, frypan. Add a tortilla sandwich. Fry for 2 minutes each side. Keep warm in the oven while you cook the remainder, oiling the pan lightly between each one. Cut into wedges. This is easily done with kitchen scissors.
