250g Frozen Cherries, or 425g canned pitted sour cherries, drained
1 Cinnamon Stick
3 Tablespoons White Wine
2 Tablespoons Chelsea White Sugar
1 : Place cherries, cinnamon stick, wine and Chelsea White Sugar in a saucepan. Cook over moderate heat until boiling.
2 : Simmer two minutes, remove cinnamon.
3 : Puree fruit mixture in a food processor.
4 : Refrigerate until needed.
