125g butter
1/2 cup Chelsea Soft Brown Sugar, firmly packed
1 egg, beaten
1 cup desiccated coconut
3/4 cup flour
2 Tablespoons cocoa
1/2 teaspoon baking powder
1 cup chocolate bits
2 pkts Smarties (50g each)
20cm by 20cm by 4cm tin
1= Preheat oven to 180°C. Line the base of the tin with waxed baking paper.
2= Melt the butter in a medium saucepan over a low heat. Add the brown sugar and mix until smooth. Take off the heat and cool for 5 min.
3= Stir in egg and coconut.
4= Sift the flour, cocoa and baking powder together and stir into the mixture. Mix thoroughly. Turn into the tin and spread evenly.
5= Bake for 15-17 min or until just firm when touched in the centre. Remove from the oven.
6= Sprinkle the choco bits evenly over the top. Sprinkle the Smarties over the chocolate, then press down lightly with the back of a spoon. Return to the oven for 5 min. Stand the tin on a rack to cool. When cold, cut into squares.
