1 cup of butter (225g)
3/4 cup Chelsea White Sugar
3/4 cup Chelsea Soft Brown Sugar
2 eggs
2 teaspoons vanilla
2 1/4 cups plain white flour
1 teaspoon baking soda
1 teaspoon salt
2 cups chocolate chips
1. Preheat the oven to 180°C. Grease an oven tray.
2. Cream the butter, Chelsea White Sugar and Chelsea Soft Brown Sugar until light and fluffy. Add the eggs into the mix one at a time, and then stir in vanilla. Combine the flour, baking soda and salt, then stir into creamed mixture.
3. Fold in the chocolate chips. Place rounded spoonfuls onto the prepared baking tray.
4. Bake until light brown, approximately 8 to 10 minutes. Let sit for 5 minutes and then transfer to rack to cool.
*This recipe can be adapted to your tastes. Try adding chopped macadamia and white chocolate chips for a more gourmet biscuit!
I love this recipe. It is easy and the cookies always come out great. I've also tried replacing the chocolate with a bag of Pebble/Smartie lollies and they came out great too.
