Ingredients

    2 cups flour
    4 tsp baking powder
    pinch salt
    100g butter
    ¾ cup Chelsea Caster Sugar
    2 eggs
    ½ tsp vanilla essence
    ½ cup chocolate chips
    1 cup milk

Method

    Preheat the oven to 220⁰C.
    Mix all the ingredients together in a large bowl until just combined and moistened. Don't overmix or the muffins will be tough and will rise unevenly.
    Spoon into well-greased muffin tins or use muffin cases.
    Bake for 12-15 minutes until cooked.
    Serve warm or cold.
