Ingredients

    The cakes
    170g flour
    1tsp baking powder
    1Tbsp cocoa
    115g Chelsea White Sugar
    55g butter, melted
    ½ cup milk
    ½ tsp baking soda
    1Tbsp Chelsea Golden Syrup
    1 egg, lightly beaten

    Icing
    Raspberry jam (for spreading onto cupcakes)
    2 cups Chelsea Icing Sugar
    2 Tbsp cocoa
    60g butter
    1tsp vanilla
    2 Tbsp hot water
    24 glacé cherries (for decoration)

Method

    Preheat oven to 190°C
    Sift together flour, baking powder and cocoa. Add sugar.
    Melt the butter.
    Prepare about 15 paper cupcake cases in 2 muffin tins

    The cakes
    Put milk, Chelsea Golden Syrup and baking soda in a saucepan & heat. When mixture starts to foam add dry ingredients, egg and butter, mix together.
    Spoon into paper cases and bake for 10 minutes in preheated oven. Cool for about 30 minutes.

    Icing
    Cut cakes in half, spoon jam on the bottom half, top with the top half.
    Make icing by mixing all ingredients together. Top cakes with icing and decorate with a cherry.
