Ingredients

    125g butter, melted
    200g Chelsea Soft Brown Sugar
    1 egg, beaten lightly
    1 tsp vanilla extract
    110g plain flour
    1/2 tsp baking powder
    2 Tbsp cocoa powder
    1/2 cup raisins

    Icing
    1 cup Chelsea Chocolate Icing Sugar 
    1 knob of butter (approximately 10g)
    1 1/2 Tbsp hot water (approximately)

Method

    Preheat oven to 175°C. Grease and line a rectangular slice tin (19cm x 29cm). Make sure the baking paper lining extends above the height of the tin.

    Combine butter, Chelsea Soft Brown Sugar, egg, vanilla and raisins in a bowl. Sift in flour, baking powder and cocoa, stir well. Spread mixture evenly into prepared tin and bake for approximately 20 minutes or until firm.

    Remove from oven and spread with icing while the slice is still hot. Allow to cool before cutting - slice should be a chewy texture once cooled.

    Icing
    Measure Chelsea Chocolate Icing Sugar into a bowl, add in butter and hot water, mix well until smooth. Icing should spread easily. If too thick add a little more hot water to allow it to spread well.

I didn't like this recipe it was sickley sweet and had texture of a chewy stogey brownie ,wouldn't make it again there are better recipes

Yummy, delicious & easy and quick to make.
I substituted the raisins with dried apricots and everyone loved it. Will be making it again.

Yummy & gooey. I substituted with gluten free flour & came out delicious! I won’t be adding the icing…tbh it probably won’t last that long. Definitely more like a gooey brownie. Like that it uses minimal flour during the lockdown flour crisis!

Yummy yummy I made a thick coconut chocolate icing to top this off .

So yummy..i use dark cocoa...really satisfies choc urge.

Super easy and quick - turned out a bit like a brownie for me! So I skipped the icing and left it at that. It's been polished off within 2 days of making!

So easy to make. Delicious. Could leave out the icing.
