2 Tablespoons Chelsea Caster Sugar
200g Chocolate Melts
1/2 Cup Boiling Water
1 Tablespoon Rum
1/4 Cup Chopped Raisins
2 Eggs, separated
1/2 Cup Thickened Cream
1 : Place Chelsea Caster Sugar, chocolate melts, water, rum, raisins and egg yolks in a food processor or blender and process until smooth.
2 : Beat cream until thick, fold through chocolate mixture.
3 : Place egg whites in a mixing bowl and beat until stiff peaks form, then fold through chocolate mixture.
4 : Pour mixture into four individual serving glasses and refrigerate until required.
