4 cups christmas fruit mince
250g butter
1 cup Chelsea Soft Brown Sugar
1 cup grated carrot
4 eggs lightly beaten
2/3 cup plain flour
2/3 cup self raising flour
4 cups bread crumbs or cobination stale cake and bread crumbs
Place fruit mince, sugar and butter in a saucepan and dissolve Chelsea Soft Brown Sugar, then bring to boil.
Set aside to cool.
Stir in rest of ingredients and put in a 9 cup steamer and boil for 6 hours.
To reheat, cover with plastic food wrap and microwave on medium for 15 minutes or boil for 2 hours.
