Ingredients

    225g butter
    225g Chelsea Soft Brown Sugar
    2 Tbsp Chelsea Golden Syrup
    5 eggs
    500g flour
    50g almonds
    1kg mixed Fruit
    1/2 tsp baking soda dissolved in 1/4 cup milk
    2 tsp mixed spice
    2 tsp cinnamon
    1 tsp each of Rum, Brandy, Vanilla, and Almond essence

Method

    Preheat oven to 125°C.
    Cream butter, sugar and golden syrup, then add eggs one at a time.
    In a seperate bowl, mix flour, almonds and fruit together making sure fruit is coated well. Add to creamed mixture along with spices and essences, lastly mix in milk and baking soda.
    Cook in a 9 inch baking paper lined tin for 3-3 1/2 hours or until a skewer inserted comes out clean.

Would love to make this but think that the temperature shown would be too high for the cake - 275C especially to cook for 3-3 1/2 hours.
