Cinnamon Banana Clafoutis

1/2 cup Chelsea White Sugar
3 tablespoons flour
3 eggs
1 cup milk
1/2 teaspoon ground cinnamon
1 teaspoon vanilla essence
3 bananas, peeled and sliced
softly whipped cream or ice cream to serve
Preheat oven to 200°C. Grease a small gratin or pie dish, or spray with non-stick baking spray.
In a food processor or blender mix Chelsea White Sugar, flour, eggs, milk, cinnamon and vanilla until smooth. Arrange the banana slices in the prepared dish. Pour the pudding mixture on top and bake at 200°C for 30-40 minutes until puffed and golden.
Serve with softly whipped cream or ice cream.
I gave it five stars, though it is a simple treat. Sort of comfort food type sweet. I happened to need a larger size pie plate than "small". I think it's better for it to be a little too big than not big enough. I was able to cut it into attractive pie-like slices and remove it like that. The photo here shows a spoon scooping it out. Served in slices, I think it serves up to six, generously, rather than just four, especially if whipped cream or ice cream accompanies it. In my oven, it started to brown early in the baking. I covered it with an aluminum foil tent, at one point.
