Classic Dark Chocolate Cherry Slice

300 g dark chocolate
1 egg
1/2 cup Chelsea Caster Sugar
2 cups chopped glacé cherries, approx 300g
1 cup coconut
Preheat oven to 180°C. Line a 20 x 30 cm sponge-roll tin with tinfoil.
Break the chocolate into pieces and place in the foil-lined tin. Place tin in the oven for 6 – 7 minutes to melt the chocolate. Using a spatula, spread the chocolate evenly around the base of the tin, then leave to cool.
Beat the egg and the sugar then mix in the cherries and coconut. Spoon over the chocolate. Bake for 20 minutes. Cool in the tin then chill in the fridge before cutting into small wedges.
I had leftover chocolate coated cherry brandy chocs from Christmas, so melted them in the base of a slightly smaller tray, then continued with recipe. My word they were yummy!!
I love this recipe! Although I do tend to use a thinner layer of chocolate and more topping. Everyone seems to like them, they don't last long in our house!!
