Microwave Coconut Fudge Bars

1 cup standard flour
1/2 cup Chelsea White Sugar
1 Tbsp cocoa
1 cup coconut
125g melted butter
1/2 tsp Vanilla essence
Icing
1 cup Chelsea Icing Sugar
2 Tbsp cocoa
30g butter
2 Tbsp hot water
Sift dry ingredients into a bowl. Add melted butter and vanilla. Mix well. Press into a 25 x 15 cm microwave proof slice tin. Cook on high power for 3 1/2 minutes. Cool in tin.
Icing
Melt butter and water on high for 1 minute. Add to sifted dry ingredients. Mix until smooth and glossy. Pour over slice. (Sprinkle with coconut if desired). Cut when icing is set.
