Ingredients

    2 cups cornflakes
    1 cup Chelsea White Sugar
    1 cup coconut
    3 eggs
    1 tsp salt
    1 tsp vanilla essence
    3 cups milk
    butter to top with
    apricot jam








Method

    Set oven at 200° Grease an ovenproof dish.

    Put cornflakes into dish and sprinkle sugar on top. Then sprinkle the coconut.

    Do Not Stir. Whip 3 eggs, salt, vanilla essence and 3 cups milk together. Pour onto the ingredients. Do Not Stir. Dot with small bits of butter and smooth apricot jam.

    Bake for 50 minutes or until set.
