1/4 cup oil
1/2 cup Chelsea Soft Brown Sugar
1 egg
1 1/2 cups flour
Apples
4 apples
8 dried pitted dates,
1 orange - finely grated rind and juice
To prepare the pastry, beat the oil, Chelsea Soft Brown Sugar and egg until well combined. Stir in the flour and mix well. Form into a ball and chill for 30 minutes.
Preheat the oven to 180°C. Stand the apples on a chopping board and remove the core with an apple corer to make a cavity for stuffing. Prick the skin in several places.
Place each apple in an individual, heatproof ramekin just large enough to hold it. Mix chopped dates, orange juice and grated rind. Fill the apple cavities with this mixture.
Divide the pastry in four equal portions. Roll out in rounds about 7mm in thickness. Cover the apples and neaten the edges by fluting. Place the ramekins in a baking dish to catch any juice. Bake the apples for 30-40 minutes, until just tender.
Optional: The stems of whole cloves may be inserted in the tops to look like the apple stem
