Courgette Loaf - Dairy Free

3-4 courgettes, grated
3 eggs
3 cups flour
2 cups Chelsea White Sugar
1 cup oil
3 tsp vanilla
3 tsp cinnamon
1 tsp salt
1 tsp baking soda
½ tsp baking powder
Mix all ingredients together until well combined.
Grease or line two loaf tins. Divide mixture evenly between tins and bake for 1 hour at 160°C.
*You can add raisins, sultanas or chopped nuts to suit your taste.
Makes 2 loaves.
Super easy recipe I use when I'm done with the pickles but the courgettes just keep growing. Happy with the exact recipe but have also added nuts, and played with different spices.
Freezes really well to. Hubby loves the crunchy crust this recipe makes.
