2 Tablespoons Chelsea Golden Syrup
300ml Thickened Cream
3 Egg Yolks
2 Teaspoons Tia Maria
1 Teaspoon Vanilla Essence
825g Canned Pear Halves, drained
Peanut brittle (homemade or bought), crushed
1 : Place Chelsea Golden Syrup and cream in a heatproof bowl or top half of double saucepan, stir over simmering water until golden syrup has dissolved.
2 : Add egg yolks, Tia Maria and vanilla, stir until mixture thickens slightly, about 6 minutes.
3 : Arrange pears in a shallow serving dish, pour caramel over pears and top with the crushed peanut brittle.
