MICROWAVE RECIPE:
1kg Cumquats
1 Litre Water
Juice of 1 Lemon
2kg Chelsea White Sugar
1/4 Cup Scotch Whisky
1 : Cut cumquats in halves and remove pips. Tie pips in muslin bag.
2 : Cut cumquats into thin slices and place in large bowl suitable for use in microwave. Add pips to bowl.
3 : Bring water to the boil and pour over fruit in bowl. Leave to soak for one hour.
4 : Remove bag of pips; add lemon juice.
5 : Add Chelsea White Sugar and stir until dissolved. Continue to cook on high for about 40 to 50 mins, or until setting point is reached.
6 : Stir in whisky and allow to stand for 5 minutes. Stir and ladle into warm, sterilised jars. Seal.
